This recipe is one of our family 's favorite. Everyone really likes the flavor, the ingredients I generally have on hand, and the one-pan meal fills their bellies well. They like it so much, I often make a double batch, and still have very little left-overs. Usually I make this recipe with a couple of healthy substitutions, so I can feel good about what I feed the kiddos......

Quick and Easy Fried Rice Recipe
2Tbs olive oil *
1 cup chopped carrots
2/3 cut chopped onion
1 cup chopped ham
1 cup frozen peas
4 eggs
1 tsp garlic powder
1 Tbs soy sauce (to taste) *
4 cups cooked rice *
Heat oil in large frying pan (wok, if you have it) over medium heat. Fry carrots, then onion. Add ham and peas and cook until carrots are soft. Add rice. Stir.
Whip the eggs with the garlic powder. Push rice mixture to the side. Add egg mixture to the other side. Make sure pan is hot, so eggs cook quickly. Scramble eggs till cooked through then mix into rice mixture. Add soy sauce to taste and stir in. (In the photos I did not add soy sauce in the pan, I served a variety of options at the dinner table.)
* Healthy Substitutions
- For olive oil: use coconut oil
- For white rice: use brown or wild rice
- Omit the soy sauce if you are concerned about salt intake
