A Homemade Peach Dessert

So yummy and chewy! Just right for a welcoming sweet treat..... A few days ago I had a group of 12 and 13 year old girls from church (Beehives) come over to my house for a cooking lesson. They were so great to have around. We made chicken stir fry and these reverse chocolate chip cookies. These girls were eager to jump in and help out. No one was afraid of cutting the raw chicken or chopping the onion. They washed their hands and were such a joy to have in my kitchen. It is so fun to have a lot of cheerful helping hands around the kitchen. These are some very sweet girls.... Within an hour the meal and dessert was done and we enjoyed a yummy meal together. Nothing reflects the feeling of safely and being truly home than sitting around visiting, listening, and laughing while sipping on a glass of cold milk and nibbling on warm and chewy chocolaty cookies..... ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ Recipe Reverse Chocolate Chip Cookies 3/4 cup butter2 cups sugar 2 eggs 2 tsp vanilla 2 cups flour 3/4 cup cocoa 1 tsp baking soda 1/2 tsp salt 1 cup chopped nuts (optional) 1 cup white chocolate chips Cream butter and sugar. Add eggs and vanilla; blend well. Combine flour, cocoa, baking soda and slat. Bland into creamed mixture. Stir in nuts and chips Bake at 350°Fahrenheit (175° Celsius) for 9 to 10 minutes FYI I always use a baking stone for making cookies and the cookies turn out extremely yummy. The stone heats them more evenly and gives them just the right amount of not-too-crunchy crunch on the bottom. Favorite Broccoli Salad Recipe Salad: 5 cups broccoli (cut into florets) 1/3 cup craisins 1/2 red onion (chopped) 8 strips of bacon (browned, drained, crumbled)* 2 cups grapes (cut in half) 1/2 cup slivered almonds Dressing: 2/3 cup mayonnaise 1/4 cup honey 2 Tbs vinegar Place all the salad ingredients in a large bowl Mix the dressing ingredients in a small bowl, then add to salad and toss Tips: Possible substitutions:

Directions Preheat the oven to 425 degrees. Grease a regular-sized 12-muffin cup pan (or line with baking cups). 1. In a large bowl, stir together the flours, salt, baking powder, and baking soda. 2. In another bowl, stir together the eggs, vegetable oil, buttermilk, flavor, and sugar until smooth. Form a well in the dry ingredients and pour in the liquid mixture. Stir just to combine. Fold in the chips, nuts and tidbits. 3. Spoon the batter into the prepared muffin tin. Place the muffins in the oven and reduce the heat to 375° Fahrenheit (190° Celsius). Let bake for 13 to 15 minutes or until the tops are lightly browned and a toothpick inserted in the center comes out clean. Let the muffins sit for several minutes in the pan and then remove them from the pan to a rack to cool. This recipe makes 12 large muffins. I like to make them for the family around St. Patrick's day every year, and let me tell you what: It take a LOT of self-control to make them ONLY once a year! They are so yummy! Chocolate Peppermint Cream Cookies Recipe 3 cups flour 1 1/4 tsp baking soda 1 tsp salt 1 1/2 cups brown sugar 3/4 cup butter 2 Tbs water 2 cups chocolate chips (1 bag) 2 eggs peppermint cream In a mixing bowl whisk together flour, soda, and salt. In a saucepan heat brown sugar, butter, and water. Turn off heat. Add chocolate chips, stir until melted. Beat in eggs, Stir into flour mixture. Drop by rounded scoops (2 Tbs) onto greased cookie sheet. Bake at 350°Fahrenheit (175° Celsius) for 10 to 12 minutes. Cool. Sandwich two cookies together using about 2 tsp peppermint cream filling. Peppermint Cream Filling 3 cups powdered sugar 1/2 cup softened butter 1/8 tsp peppermint extract 1/4 cup milk food coloring (opt.)
