perfect for St Patrick's Day
I like to make them for the family around St. Patrick's day every year,
and let me tell you what:
It take a LOT of self-control to make them ONLY once a year!
They are so yummy!
The dough is so smooth and soft and fluffy, and rich-but-not-too-rich.....
Oh my....
You will have to try them out and see for yourself.
Chocolate Peppermint Cream Cookies Recipe
1 1/4 tsp baking soda
1 tsp salt
1 1/2 cups brown sugar
3/4 cup butter
2 Tbs water
2 cups chocolate chips (1 bag)
2 eggs
peppermint cream
In a mixing bowl whisk together flour, soda, and salt. In a saucepan heat brown sugar, butter, and water. Turn off heat. Add chocolate chips, stir until melted. Beat in eggs, Stir into flour mixture.
Drop by rounded scoops (2 Tbs) onto greased cookie sheet. Bake at 350°Fahrenheit (175° Celsius) for 10 to 12 minutes.
Cool.
Sandwich two cookies together using about 2 tsp peppermint cream filling.
Peppermint Cream Filling
3 cups powdered sugar
1/2 cup softened butter
1/8 tsp peppermint extract
1/4 cup milk
food coloring (opt.)
Beat together until smooth
